Sorry it’s 6 months after you’ve already posted…but, that tool is just a 4″ floor scraper. Sold at almost every hardware store and most definitely at lowes or home depot. It has a razor blade that is ideal for pulling up old thinset or paint on the floor.
As for removing all of the thinset, yes! If you want your replacement tile to sit level with the other tiles you’ll need to remove the old thinset. Once you pull up the cracked tile the old thinset has no value to you anymore as

Any ideas on what to do in cases where that same individual HAS to be repaired, as there is no exact replacement available?
@donnaoday : The sealer is applied about one week after the grout is fully dry. I had an installer do my bedrooms four years ago and this is what he told me to do; wait until the grout is fully dry and I waited nearly a week to make sure. Mop on the sealer just as though you were mopping a floor, remove the excess, and let it dry.

what is the tool you use to remove the old thin-set (at 1:36).. it took me ages to remove my old one.. is it essential to remove it all, or does it not matter?
What happens if you do not remove the original thin set and you simply apply new thin set over the old…then set the tile?

this is a crap example of how to replace a tile. The grout you are scraping out is wet, there is an exposed edge to the tile you remove and you are hitting the tile once. You need to show a real example, it is never this easy and you are full of it!
What about putting sealer on the new grout? Hmm, looks like he never answers the questions here. Not good.
good video alot easier with a demo hammer though.
